OLD FASHIONED FRIED CAKES
2 eggs 1 cup sugar 3 Tbsp. melted shortening 1 cup sour milk 1 cup mashed potatoes 4 cups flour (see note*) 1 tsp. ground nutmeg 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt Fat (for deep frying)
Beat eggs; add sugar, shortening, sour milk and potatoes; set aside.
Mix the rest of the ingredients and add to the potato mixture.
Roll, cut and fry in deep fat.
*Handwritten note in cookbook: Use 3 cups flour and use the extra cup for flouring the board - usually it will take 1/2 cup.
